Why is nitrous oxide used in whipped cream dispensers?

Commonly known as "laughing gas," nitrous oxide is utilized in the food industry, particularly in whipped cream dispensers, to create a smooth and velvety consistency. Many international coffee chains use nitrous oxide in their whipped cream dispensers because it poses no significant health risks due to its low usage levels.

In January 2015, the National Health and Family Planning Commission approved nitrous oxide as a new food additive. According to the commission's website, nitrous oxide is categorized as a propellant and is only suitable for use in "processing of light whipping cream and similar products."
